Lemon essence is predominantly crafted in California, Argentina, Sicily, Brazil and Spain. Its essence is procured through cold expression of the peel, while the juice of the fruit is used to produce citric acid for food products.

History

The lemon bush is native to the Far East and first arrived in the Mediterranean region during the Crusades.

The zest of 1200 lemons needs to be cold expressed in order to produce just 1 kg of essential oil. The leaves and small branches are distilled to yield lemon petitgrain essence. Tonic, astringent and antiseptic, lemon essential oil can purify water, sooth insect bites and tension headaches. It also stimulates the digestive system and helps eliminate cellulite and smooths wrinkles. Lemon juice is used as an effective prevention against scurvy.
